Ingredients and spices that need to be Take to make Colourful Millet Katori Chat:
- 1/4 cup Pearl millet(soaked for 3-4 hours)
- 1 big sweet Potato
- 1 teaspoon besan/cornflour
- 1/4 cup red Pumpkin cubes
- 1 Cucumber
- 1 deseeded Tomato small cubed
- 1 medium size Onion chopped
- 1 tablespoon roasted Peanuts
- 2 tablespoon Pomegranate pearls
- 1 tablespoon Beetroot juice
- 1/4 cup thick yoghurt
- 1 teaspoon Chat masala
- 1 teaspoon Roasted cumin powder
- 1 teaspoon Kashmiri red chilli powder
- 1 tablespoon Lemon juice
- as per taste Black Salt
- as required Green Chutney
- as required Sweet and sour Tamarind chutney
Instructions to make to make Colourful Millet Katori Chat
- Clean and soak millet with water for 3-4 hours.

- Cook the millet with required water. Set aside. Millet takes much more time to cook than rice.


- Peel and grate sweet potato.


- Mix 1 teaspoon of besan or cornflour to the graterd sweet potato. This will help for binding.

- Take a cup cake mould. I used silicon mould as de moulding is very easy in silicon moulds.
- Place grated sweet potato on each mould so that they look like katori or tokri.

- Bake them in pre heated oven at 180 degree C until they become golden brown and crisp.

- Take out from oven and let them cool.
- Gently de mould them and set aside.
- Rub pumpkin pieces with little black salt, chat masala and chilli powder.

- Roast the pumpkin pieces in oven until they are soft and get charred mark. Remove from oven and set aside. You ca n roast them in a pan also.

- Cut cucumber, onion,and tomato into small cubes.
- Mix beetroot juice to yoghurt to make pink yoghurt. Also add in salt and sugar as per taste to the yoghurt mixture.

- Assemble the chat
- Place sweet potato katoris to a serving plate.

- Fluff the cooked millet and mix with roasted pumpkin pieces, cucumber, tomato, onion,roasted peanut, pomegranate pearls, chat masala, roasted cumin powder, kashmiri red chilli powder,black salt and lemon juice.


- Fill each katori with the prepared chat mixture.

- Top with pink yoghurt, green and tamarind chutney.

- Serve the colourful and healthy chat immediately.
