  11. Next, add a pile of greens to the middle, crumble over the feta (about 60g), a good grating of lemon zest and 1 tbsp olive oil. Season with salt and pepper. Add a sprinkling of dill or wild garlic if you have it.
  12. Fold over the sides, then fold over the top and bottom like a parcel. Don't worry if it's a bit rough and ready!

  13. Heat a large heavy-based pan over a medium-high heat with a splash of oil. You can use a balled up piece of kitchen paper to spread the oil evenly around the pan.
  14. Add the flatbread to the hot pan and fry until golden on each side.
  15. Repeat with your remaining ingredients. Wrap up to take to the park or eat immediately.
