- Boil or steam cubed potatoes and vegetables separately.They should not be overcooked.Peas should be just cooked and kept separately without mashing.Mash other vegetables with a masher.


- Heat 1 tbsp oil in a non-stick pan and fry chopped onion golden brown.Add the mashed vegetables,ginger garlic paste and salt and sugar to taste.Toss all till lightly browned and add roasted peanuts and gram flour.Add garam masala.. Toss again to form into a dough.Sprinkle chopped coriander.Divide the dough into even sized kebabs.


- Make a slurry of gram flour and cornflour.Dip kebabs in this slurry and double coat it with breadcrumbs to make the coating very crunchy and soft inside.


- Heat oil in a pan and fry kebabs till golden brown.Serve delicious crunchy kebabs with salad and hot and sweet tomato sauce or with a coriander, curd and mint dip.
